Weekday Menu Inspiration: So what is on the menu this week? (w/c 24.11.25)

weekday Menu Inspiration: meal plan

This week’s menu is a good one — it’s all about saving time and money without skimping on flavour. You’ll be using clever ingredient swaps between dishes, and there’s even one meal that makes two portions — perfect for those nights when you’re too busy (or just too tired) to cook. Simply heat it up and you’re good to go!

From cosy, winter warmers to Chinese-inspired flavours, this week’s lineup has something for everyone. Each recipe can be easily adapted for different dietary needs — whether you’re vegetarian, gluten-free, or dairy-free — while still delivering big on taste.

So what needs to be on your shopping list?

Weekday Menu Inspiration: Shopping List

It’s really that simple this week for dinner! Nip down to your local supermarket for these few bits and you’ll be equipped for Monday through to Friday🗓️

I’m no chef, but I do love cooking – so here’s what I would do with these ingredients:

Sweet and Spicy Gammon🍖

Serves 2

What better way is there than to kick off this week’s menu inspiration with recipe one of our ‘Back Home, Back Cooking’ series?

Using your gammon steak, sweet potatoes, pineapple, sriracha and green beans… Find the full recipe here!

And voilà — two dinners sorted! Delicious, quick, and ridiculously easy.

Stuffed Peppers🫑

Serves 1

Easy As:

  1. Preheat your oven or air fryer to 180°C (fan).
  2. Slice the tops off two bell peppers and gently scoop out the seeds.
  3. Place the hollowed peppers onto a baking tray and roast for 10 minutes to soften.
  4. Remove from the oven and spoon your Mexican-style rice evenly into each pepper, packing it right to the top.
  5. Pop them back in for another 10 minutes until everything is piping hot.
    • Got some leftover cheese in the fridge? Sprinkle a handful over the peppers for the final 2 minutes to get that perfect golden melt.
  6. Finish with your favourite sauce — salsa, sour cream, chilli… whatever you’ve got in the cupboard or fridge!

And that’s it: easy, warming, low-effort comfort food ready in no time at all. Enjoy!

Chicken, Mash and Gravy🍗

Serves 1

Here’s How:

  1. Start by peeling your spuds and popping them into a saucepan of boiling water to soften.
  2. While they cook, measure out your peas into a microwave-safe bowl, and add your gravy granules to a jug ready for the kettle.
  3. Next, crisp up your pre-cooked chicken breast in the air fryer — 170°C for around 5–8 minutes usually does the trick.
  4. Once the potatoes are tender, drain them, start the peas in the microwave, and boil the kettle for your gravy.
  5. Mash your potatoes until fluffy and smooth.
  6. Then simply plate everything up and finish with a generous pour of steaming hot gravy.

A perfect winter warmer: cosy, comforting, and completely fuss-free.

Sweet and Sour Chicken🍜

Serves 1

Steps:

  1. Roughly chop your pre-cooked chicken breast, any leftover peppers, and a handful of pineapple.
  2. Heat a pan and gently fry the peppers until they soften, then add the pineapple and chicken, letting everything sizzle together.
  3. Stir in your pre-cooked noodles.
    • Using dried noodles instead? No problem — just boil them first and add them in once cooked.
  4. Give everything a good toss, then pour over your sweet and sour sauce.
  5. Mix thoroughly until everything is glossy, coated, and piping hot.

You might be expecting another step… but that’s genuinely it!

All the classic sweet-and-tangy flavours Brits love — ready in around six minutes. Enjoy!

✨And that’s a wrap on this week’s menu!

Is that the perfect week or what? Dinner inspiration: officially sorted.🙌🏻

Remember — every recipe can be easily made meat-free, gluten-free, or dairy-free, depending on what works for you.

I’d love to know what you think!
