Although us grads usually love a quick, easy and affordable meal (and rightfully so)… having access to a full kitchen means we can finally take our time to cook something a little more technical, and a lot more special.
And when better to try something new, than during ‘Veganuary’? There are so many delicious meat-free alternatives nowadays, so whether you want a change from your carnivore diet, or simply want to spice up what you eat, my ‘Lentil and Quorn Bolognese’ is sure not to disappoint.
(And something that can be adapted to whatever your taste preference is).

You can choose to add any of your favourite veggies, and there’ll be more than enough to go around – whether that means feeding the whole family or freezing the leftovers for yourself at a later date.
If you were shopping at ASDA, for example, this is what I would be picking up:





Luckily, a few of the ingredients you’ll need should already be lurking in your cupboards – garlic, salt and pepper. Maybe you even have some leftover cheese in the fridge to sprinkle over at the end – anything you have will do!
For just £4.44 you can cook up this meal (serving 3-4) and still have leftover ingredients which you can incorporate into your other meals throughout the week.
Here is how I cook it up:
- Prepare your veg by peeling and slicing your mushrooms, and chopping your courgette into cubes.
- Add oil to a hot frying pan and add your frozen quorn.
- When starting to defrost, add your mushrooms and courgette.
- Then, when everything has softened, add some garlic, salt and pepper and mix well.
- Drain your lentils and pour over your cooked mix. Let this heat together for 5 minutes.
- Then simply pour over your bolognese sauce and stir well.
- Once everything has cooked through – you’re all done!
It really is that cheap and easy to do!
And another great thing? You can serve it up with whatever you like… A jacket potato? Pasta? Rice? Garlic bread? A side salad? Or simply on it’s own… the options are endless and the choice is completely your own.
