Your go-to meal spot of recipes for those nights when you just… canny be bothered.
These meals are super simple, surprisingly fast, and require next to no kitchen skills whatsoever. Absolutely perfect for post-uni life… trust me.
So, struggling with the what on earth do I have for dinner? question again?
Well, let me introduce you to Chicken Fajitas🌮

As simple as this: nip down to the shop and grab a packet of chicken, pick up some peppers, fajita seasoning, salsa (mild or spicy), and choose between a packet of rice, wraps or tortilla chips to serve on the side!
This time let’s head to Morrisons to complete our shop!

It would all cost only £7.20, and not only serve up this delicious dish, but also give you a leftover chicken breast, peppers, salsa and wraps or tortillas (dependant on what you choose) for another night!
Sorry, but… bargain alert.
And the best part? Making Chicken Fajitas is even easier than buying the ingredients.

Chicken Fajitas🌮
Serves 1
- Roughly chop your chicken into strips and pop them in a frying pan with a drizzle of oil and any garlic you have in the cupboard.
- Whilst cooking, cut your pepper into long strips.
- When the chicken is almost cooked through – add the peppers to the pan.
- Once the peppers are tender and the chicken is cooked through, sprinkle over your fajita seasoning and mix well.
- Then add your salsa, mix well and cook until warm through.
- Finally, either pop your rice in the microwave while the fajitas finish heating through – or prepare your wraps/tortillas on your plate if that is what you’ve gone for!
Then simply plate everything up when everything is cooked. A full-on fajita fiesta, ready with no real effort and in no time at all.
